I don't think I have a good understanding of Xen and kernel.

Assuming you're not doing pv-ops, which you're not by default, then it doesn't really matter what you do with the kernel on your node. It'll be ignored.

Not entirely correct – it doesn't matter if you're using one of Linode's pv-ops kernels, either. It only matters when you set up pv-grub.
