2021 Texas winter storm impact Linode Dallas and to what extend?

Thinking of deploying a node in Dallas Texas b/c it is centrally located, as opposed to left or right side of the country, but concern how the next winter storm might affect the data center and network transmission.

Hello,
All of my Linode's have been in the Texas data center for similar reasons, due to its central location in the US. I have been through power outages before, in which case, generators and UPS supplies have covered them well. During such times, no network outages had been observed for me, and I have not encountered any difficulties during severe whether systems that may have gone through Dallas. Everything has stayed online and reliable.

I hope this helps.

Thank you. Do you know what type of processors are at the Dallas data center? In Fremont, I am using a 4 core AMD EPYC 7601 (circa 2017).

I know that AMD EPYC processors are in the Dallas data center, as well as a few Intel CPU's, though I doubt you'll be placed on anything but an AMD. The precise modle of the CPU you'll be put on is random, there's no way to know that until you get a Linode and check it for yourself.
