How do I move a folder from my server to my PC in resuce mode.

Have you read through the Rescue and Rebuild guide? Specifically the section about starting SSH and setting the root password? You could move your files with rsync, or scp at that point.

There is also sections in that guide about mounting your disks so you can get to their contents if that is the part that is giving you trouble.
