Error when running apt update on Ubuntu 19.10

When trying to update my Linode running Ubuntu 19.10, I'm getting the following errors:
Err:8 http://security.ubuntu.com/ubuntu eoan-security Release
404 Not Found [IP: 2001:67c:1562::18 80]
...
E: The repository 'http://mirrors.linode.com/ubuntu eoan Release' no longer has a Release file.
N: Updating from such a repository can't be done securely, and is therefore disabled by default.
How can I fix this and update my system?

These errors are a result of Ubuntu 19.10 reaching EOL (End of Life) on July 17, 2020. Generally, operating system versions sporting the LTS (Long Term Support) tag are supported for ~5 years, whereas the in-between versions (18.10, 19.10, etc.) can be supported for as little as ~9 months.
Your best bet in this case will be to either:
- Deploy a new server running the latest LTS version and transfer your data. As of this post writing, the latest version is Ubuntu 20.04 LTS.
- Upgrade your current version from Ubuntu 19.10 to Ubuntu 20.04 LTS. There's another great Community post outlining the procedure here: Ubuntu 20.04 Focal Fossa

It's worth mentioning that direct "inline" operating system upgrades (i.e. 19.10 to 20.04 LTS) can lend themselves to problems and often yield inconsistent results. Whenever possible, it's recommended to go the route of transferring data from a server running the older OS to a server running a fresh install of the new OS.
