Ubuntu vs Linux Mint vs Raspbian
How different is plain ubuntu from Linux Mint or Raspbian?

Mint is a desktop derivative of Ubuntu mostly focused toward beginners, that (at least if I remember correctly) offers a pre-Unity desktop, Gnome 2-ish sort of experience. The only major differences are in the desktop environment offered out of the box, so it doesn't really have any bearing on what you'd use on a Linode.
That's even moreso the case with Raspbian, which is just Debian designed to run on the Raspberry Pi. It differs from Ubuntu by not being Ubuntu in the first place as it's based on Debian 9, and also by being intended for one specific CPU architecture (in fact one specific subset of those machines, really).
This is a really weird question to ask a VPS hosting company.
