SPAM folder
Everything works fine, but the SPAM folder does not exist and spam emails arrive the same.
I would like to create a folder of SPAM and that automatically go there the mails considered spam

there are lots of guides on how to install and setup sieve with dovecot.

dovecot does not filter emails by default, it requires an external application to do that, like sieve. Once you install sieve, you can filter incoming emails based on the X-Spam-Flag header and move them to a spam folder accordingly.

I think the equivalent CentOS package for sieve is pigeonhole, so try
yum install dovecot-pigeonhole

Sorry for not mentioning it before, but I do not have Centos. I have Ubuntu 14.04
